Recipes/Beet Salad

Ingredients:
4 medium beets - 500g
2 large red potatoes, cleaned 300g
4 carrots, cleaned 200g
2 tablespoons mayonnaise, or to taste
1 tsp mustard powder, or to taste
1 tbsp flavoured vinegar
Directions:
put the beets in the instant pot on the trivet
pour 1 cup of water into the pot
cook on high for 5 minutes (longer if the beets are a lot bigger than the potatoes
cut up the potatoes into ~2cm chunks (ok to leave skin on if clean)
quick release pressure, add carrots and potato chunks
cook on high pressure for 4 minutes longer
quick release again, remove everything, cut beet and carrots and put in serving dish
mix mayo, mustard powder and vinegar in a small bowl, and then mix into the veggies.
serve warm, although it is also good cold.
